The crockpot saw a lot of use today! I am sure I have mentioned it before, but lunches tend to be themed around here. The current theme is corn tortillas and it shows no signs of changing any time soon. Each week, I make *something* to get us through the weeks lunches and with the corn tortilla theme it has been easy. Today I made refried black beans (black beans, onions and garlic cloves cooked in the crockpot and pureed when cooked. Season with paprika, oregano, cumin and cayenne pepper.) Last week they just ate cheese quesadillas or nachos and the week before I made a ground turkey/lentil mix for burritos/quesadillas.
Right now, I have kidney beans in the crockpot for dinner tomorrow. Normally, if I don't have cooked beans in the freezer, I would just soak the beans overnight and toss into the soup in the morning. Since I am making chili and beans will not get soft if you add tomatoes and I am a little creeped out about undercooked kidney beans, I cooked them on high for quite a bit and will let them simmer overnight in the crockpot. After my Dr. appointment tomorrow morning, I will drain and rinse the beans and make the chili in the washed crockpot.

yeah I make a "chili" concoction in the crockpot usually with stew type meat but hubby said "let's try it with burger meat" so I made that over the weekend and he went nutty over it...smelled soo good LOL....salsa,black beans,pinto beans,red beans,chili beans,meat,seasoning-let it simmer a while....mmmmm gotta luv the crockpot---hope you are feeling better
